RÒST 
Quality:
Red wine from Sabbioneta. Typical wine of the region. Dessert wine.
Grape types:
Careful selection of Lambrusco grapes of the Ancelotta, Ruberti and Salamino varieties.
Source:
Sabbioneta (Mantua).
Vinification:
Begins in the first week of January. After 30 days' maceration there is a prolonged period of fermentation. The light pressing of the over-ripe grape gives 45% wine.
Process:
Late harvest of the grapes to allow the Botrytis fungus to develop and then there is a short period of maturing.
Character: Ruby-red coloured wine, with a bouquet of cocoa, walnut and very mature wild cherry. Good body with harmonic flavour. It leaves a pleasing, lasting well-balanced sensation on the palate and a hint of wild red fruits.
Alcohol content: 13%
Sugar content: 85 g/l
Serve: at 10/12 °C
To be drunk: Within two years.
Serve with: herb cheeses, strawberry or dry biscuits. |
