Red wine from Sabbioneta. Typical wine of the region.
Type of grape:
100% Ancellotta (late harvest).
Source:
Sabbioneta (Mantua).
Vinification:
Starts in the first 10 days of December. After 30 days' maceration there is a very long prolonged fermentation. The light pressing of the late-harvested grape gives 52% wine.
Refining: Partly in stainless steel, partly in glass with a short period in wood.
Character: Ruby-red wine with a hint of purple. Bouquet of very mature red fruits, notes of conserve and liquorice and an ethereal feeling of ink or sour cherry is particularly interesting. Well-structured, with a harmonic smooth taste, gives a pleasant, lasting well-balanced sensation.
Alcohol content: 13%
Serve: at 18/20 °C
To be drunk: 2 - 4 years after harvesting.
Serve with: Red meat, game, seasoned cheese (Parmesan). May also be drunk at the end of a meal.
